Shepherd’s pie is another regional favorite. Whilst some would tell you that a Shepherd’s pie is made with beef, the traditional recipe uses lamb.

Time to cook: Approximately 45 minutes
Take…
Lean minced lamb
Onion
Carrots
Flour
Tomato purée
Worcestershire sauce
Stock
Potatoes
Parsnips
Savoy cabbage
Butter
Milk
Make…
1 In a non-stick pan dry fry 450g(1lb) lean minced lamb with 1 onion, chopped and 2 carrots, peeled and diced until the mince is browned. Stir in 15ml(1tbsp) flour, 15ml(1tbsp) tomato purée and 15ml(1tbsp) Worcestershire sauce. Add 450ml(3/4pt) stock, bring to the boil and cook for 5-10 minutes until the carrots are just soft.
2 Meanwhile in a large pan place 675g(11/2lb) potatoes, peeled and cut into chunks, and 2 parsnips, peeled and cut into chunks. Bring to the boil and cook for 20 minutes or until soft. During the last 8-10 minutes of cooking time add 250g(9oz) Savoy cabbage, shredded, to the pan. Once cooked drain and mash with a knob of butter, milk and season well with salt and pepper.
3 Transfer the mince into an ovenproof dish and spoon the bubble & squeak mash over the top. Cook in a preheated oven for 25-30 minutes until golden brown.
Eat…
Serve with………. peas or baked beans but don’t let John or his Dad have baked beans

Wonderful recipe – take note, Mrs. MTSFP. We don’t have lamb very often, but it might be a nice change of pace, although I am certain that the little one would probably turn her nose up at the idea.

I am confused. The Two Fat Ladies made a bubble and squeak that had to do with frying cabbage and what not. Is that different than the tater parsnip mash topping? What happens with taters and turnip?

Mr. Luis is so like many of the dedicated Carnival staff that I’ve encountered over the years. They have a pride in their work that is admirable. The fact that so many staff and crew you’ve interviewed on this blog thingy have such longevity with Carnival tells me CCL must be doing something right.

Funny your Mum posted the Shepard’s Pie recipe. Since I sent Jeff off to college this month I have been thinking of things to make, freeze and send with him. I used to make this dish and had just thought a recipe might be necessary since it has been awhile since I had made it! . Thanks Mum! You are psychic! Now this dish would also be a good dish of comfort on a cruise! I just have to figure how to send him off with melting chocolate cake, and pizza Margarita like In Venice, or the fish in Dubrovnik! John feel better. Be gentle with returning to eating. Heidi, your pictures make me yearn to be back on the ship! Mr. Luis, you are to be admired for your dedication and for caring GSA much for your family that you call every day. OH NO! Is John doing RERUNS of the runs? Ok it’s the weekend but the comments aren’t even getting updated. Or did he bend to far over and push the lid into the flusher button and open the trap door releaceing the WHOOOOOSH of the sucking giant in the bottom of the ship. John, I’m soooooo glad you feel better. We missed you! Heidi is a wonderful wife to take such good care of you. Can I please have Mrs. Irving’s address? I’d like to know what drugs her Dr. is giving her. I think what may have happened is, she got on the wrong ship by mistake. I’m sure she was scheduled for the RCCL ship by the name of Another Planet! Oh well, gotta laugh huh? John, I don’t think your bloggs are to long nor are they like a Carnival commercial. I think you have a passion for your job and it shows in your blog. Just keep doing what you’re doing and don’t let people make you feel bad. Yum! What a great lunch that was. I’m very glad you and Heidi got to enjoy some time with friends. You guys needed a break. I’d like to thank Carnival and everyone who participated in the Walk for the Cure. Also a great big thanks from my mom a cancer survivor. I sure hope we get to do it on The Carnival Liberty in February. One last thing, Southern Dreams you’re still in my prayers and I’m glad to hear that you had your last treatment.
