Two Generations of Freedom

For those of you who have looked at the Web cam this Thursday morning you will have seen it is one of those days that cruising dreams are made of. The sun is already sending down its warm rays to the young and old on deck wanting to embrace its warmth. The sea is as calm as a room full of Buddhist Monks and guests are slowly heading to breakfast with the only difficult choice being whether or not to have a second helping of pancakes.

The crew is already hard at work around the ship, greeting, serving and entertaining in their most friendly of ways and slowly the day is taking shape.

Good Morning, it’s 8:22am and I just returned from a little walk outside and I was struck by what I saw………..for two reasons.


Obviously I had not told anyone onboard about the tragedy of yesterday….why would I want to burden anyone with that? However, it seemed very surreal for me this morning watching guests splash in the pool while kids squeal in excitement as they have fun on the giant slide. ……………….life goes on …………it has to…………..it must……………yet as I said my good mornings and chatted to a few early risers it made me realize yet again how precious life is and how for one family who……unlike ones who will enjoy this perfect day at sea…………life will never be the same again.

It is not easy taking care of the everyday things that life throws at you after a day like yesterday but today that is exactly what I have to do. One such thing is meeting with a group of guests who asked me to come to one of their gatherings to host a Q and A session about life onboard etc. The group is made up of 45 men and ladies all of which have one love in their life………….cooking. This is a group of amateur chefs from Iowa who bought a small restaurant between them and spend their days running it.

The menu is different every week because a different couple is in charge of running it and cooking the weekly dishes. The restaurant which is simply called “What’s For Dinner” has been going for 5 years and they are all here to celebrate. The 40 friends have known each other for many years. Most are now retired and include a Fire Chief, a vice president of a University and also one couple who own a sanctuary for abused dogs and cats. Their love though is cooking and each week they create a new menu and from what they were telling me it has a huge local following.

I have to admit that I cannot cook. In the UK when I was at school cooking was taught only to girls while us boys were taught more manly things like woodwork, metal work or how to gut the wild boar you had just shot with a bow and arrow…………cooking was ……….well………….. a bit girly and back when I was in short pants at school the mere suggestion that you were interested in anything that went on in the kitchen meant that you were only one step away from liking ponies and Cher ……………and the obvious abuse that would follow.

Now of course the world of TV chefs is dominated by “the man” and although there are I am sure many a good women chefs on TV the only ones I can name are men. We have of course the quiet reserved Gordon Ramsey of Hell’s Kitchen fame whose ingredients often include Fu%^^&% Tomatoes and Sh^& mushrooms. You have the Naked Chef……..Jamie Oliver who seems to be eating more pies than cooking them these days and is at the moment cooking on a show with Oprah……….who by the way has no idea what he is saying half the time …………..she just nods her head and pretends to understand his cockney accent as he says things like “awight Oprah luv” and “fancy a bit of spotted dick?”

Then there are the American giants………….I really like Emeril and some other guy who from the south. Both cook everything with gallons of spice and it is no surprise that after a show where they cook Tabasco-flavored peppers sautéed on a bed of Tabasco with hot chili drizzled curry paste over a bed of chili that the first commercial is either for Gas X or antacid pills the size of the saucepan they just cooked the stuff in.

No, for me a successful nights cooking is getting exactly what you ordered from the fast food drive through and making it home before the game starts.

Why am I rambling on about this……….well………..I know some lines have a “celebrity chef” whose cooking is known by the majority of people who cruise on those ships. We have the incredible George Blanc whose additions to our menus and supper club have been amazing. However………….would you like to see a celebrity chef involved in what we do……….if so…………who……….any ideas? I am sure my mate Kevin the Chef will have some input as I hope will some of you as well.

NED RIFKIN….The story of my Spring Breaker friend Beavis who was on stage with Marcus and I is actually a rare one. Usually the stage acts as a barrier to anybody who may have been drinking. However, I do remember one time when a young man named John, who is a wonderful chap, cruises with us regularly but unfortunately suffers from dual personalities once came on stage during the dancers performance of a French Can Can…..it wasn’t pretty and resulted in me having to lift him over my shoulder carrying him off the stage. Thank you for allowing me to share this story and I also hope Mr. Bell buggers off soon.

DIVETRASH……………..Hello Laura. I was talking about you last night with my friend Robert Schneider. I actually admitted that you know more about our piano bar players than I do. Although there may have been a little sarcasm in my reply, there was much more gratefulness for the support you have for these great entertainers. I will mention the piano bars in my announcements, however, when you have a player like Ron and as full as the bar is automatically, there is no need. Every seat is taken and short of hanging a few of you upside down from the ceiling, I am not quite sure how we would get any more in there. UNCLE DOUGH…………………………..Sounds like you had your own Spring Break experiences with your grandkids last year on the Carnival Fantasy. This cruise has been fun with very little incidents outside of the normal goings on of today’s average college kid. GEORGINA FAIR………………………..You asked how far in advance we plan the activities. Mostly, 90% of what we do on a cruise-by-cruise basis is pretty much set. However, this will change when we look at the demographics, the time of year and also the average age of the guests. You asked about if we can, as a company, send guests Carnival Capers ahead of time. This may be a little difficult; however, certainly, you can find what is happening immediately when you board from the Carnival Capers which is placed in every stateroom before embarkation starts. I certainly do not want you to miss a thing and with Kara sounding so excited I suggest if you have any questions about events or activities you drop me a line here at the blog thingy. LUCAS………………………………….I asked Heidi for her recommendation and she suggests that you do not hire a car to drive in Amsterdam. It is very difficult with many one-way roads, with many areas reserved just for trams and bicycles. The public transportation system is excellent and taxis within the city are not expensive. As for a restaurant serving traditional Dutch food, Heidi promises, she hasn’t forgotten and will send you some within the next couple of days. Have fun and see you in July.

JOHN H……………………………….I did try to put Mr. Beavis in his place as gently as possible, however, the standing ovation from the audience probably shows it was something they all wanted to do. Hope all is well with you and I hope you enjoy today’s blog.

Let’s talk about New Orleans.

During the recent Seatrade Conference some of the Carnival folks have met with the port of New Orleans executives.

They were so excited about our plans to hold a pre-cruise charity event and are fully committed to helping us make this happen.

In the days ahead, planning will begin and the Carnival flag will proudly fly in the Big Easy.

I will give you more information very soon but it is going to be fantastic.

Meet Al and Pauline Gaylord from the wonderful sounding Crab Orchard, Kentucky……….population …….well as Al said in that wonderful Kentucky accent “there ain’t many of us.”

Al and Pauline were with me in the marriage show today which as always brought it’s usual share of humour and fun but none more so than with this great couple who have been together for and amazing 66 years. They live the small town life with Al Gaylord having been mayor for 28 years before he retired. He also owns the town’s convenience store, the fishing lake and in his spare time bends over backwards to help the community in so many other ways.

Pauline is one of those people you usually only meet on TV……usually standing on the porch in he apron proclaiming to the family that there is ice cold lemonade and apple pie for those that want it.

Al was wearing a black jacket that proudly proclaimed he was a WWII veteran and when I asked him where he served he stood tall and proud and told all of us that he fought in France and in Africa. He then told us all that his unit has a yearly reunion and that 5 years ago there were 50 plus but this year ………… there were just nine who attended.

This couple was wonderful and, like a warm fire, the audience gathered around them to hear more stories of their love for each other and how Al Gaylord had fought for his country.

I had been sent an e-mail with a top ten list which one of the other cruise line presidents had read out during the Seatrade conference yesterday. The top ten was based on “reasons to go cruising” and contained many economical and financial reasons to do so………..it was an OK list.

However, as I watched the day take shape I realized that this……….this was the reason to go cruising………….everything that cruising is about was happening right here………service, choice, sun, food, relaxation all the words that you can think of were happening right in front of me. Presidents and CEOs may have rightful concerns about fuel, government legislation and other boardroom-level concerns. ………………I am but a humble Cruise Director but looking at 3,400 people here enjoying fun, sun, service and meeting people like Al Gaylord …………well if you ask me……………..the state of the industry………….at least here……………is bloody brilliant.

Tomorrow (Friday) marks the last day of another cruise. Once again, it has been very eventful with happiness and sadness both at the forefront.

In today’s blog, we mentioned Al Gaylord who, with his band of brothers protected our freedom. Then, we read of Angela, whose husband died in Iraq, protecting the same freedom Al had done many years ago. The Carnival Freedom contains the very word both were fighting for. I have been talking a lot about the Spring Breakers this week and I wondered if they realized that because of people like Al and Angela’s husband that they have the freedom to express themselves as they do………………..let us hope so.

    I just started reading your blog a couple of weeks ago and really truly enjoy your colorful insights! My wife and I took our first cruise on the Carnival Festivale back in 1985 for our honeymoon. We absolutely loved it! Unfortunately, it was 10 years after that before we took our next one on the Fantasy. It was a great cruise, but I think our expectations were set a little high from our honeymoon.

    In the last 15 months we have taken 3 cruises with another cruise line. Although we have completely enjoyed them, your blogs have convinced us to try Carnival again. My wife and I (along with our 4 kids) would love to book a cruise when your working. When is your next “tour of duty” and which ship will you be on.

    As I sat here realizing that it is only 121 days until the Splendor, I decided to take a look at today’s blog. What I saw truly brought tears to my eyes. It was the last random photo captioned “The
    Symbol of Freedom” with the Carnival smokestack.
    John, you have no idea just how special these cruises are to our family. My husband and I really give our jobs 110 percent, but when we go on vacation, we give that 110 percent also.
    My husband and I have had many discussions about the fragile nature of life. I looked at the photos of people on the deck and I realized that July 13th would in fact come. We will again have our cruise experience and that is all that matters.
    I wish there were some way I could get three copies of that random photo of the smokestack with the caption and frame them for my daughter, my husband, and myself. It was such a touching photo and caption. Thank you!

    What a great topic for part of the Blog, Celebrity Chef’s. Well as one of the youngest Executive Chef’s I know working in New York, and being totally egotistical, I would have to suggest myself of course. But in playing fair and knowing you want someone who was seen last week with Uma on the beach in St. Barts slow roasting prawns over a small fire. So who is the question well I can think of three names right off the bat and they my friend are true inventory’s. But before I do please you must remember most Celebrity Chefs only cook when the cameras are rolling and they are getting $$$$$$ a hour. But their dishes and ideas are great, most of the time. Ok So the first Chef I suggest is Kevin Mc………….. oh wait thats me sorry, try again. The first Chef (these are in no particular order by the way) Anthony Bourdain , He will eat dead (odd animal name here) roasted in the stomach of another with a side of Tabasco sauce, and wash it all done with a beer. He is also one of the top French Chef’s in the world. Next Kevin… sorry did it again ok next Chef Thomas Keller, name sound familiar to anyone on the west coast, ok who’s heard of the French Laundry in California, ranked somewhere around number 5 in the world, they have also won 2005-2008 5 diamond AAA award, and Mobil’s and Michelin’s and a few others. Wow so far all I have suggested are people who cook food in the traditional French style. Sorry John, I’ll now suggest someone who I know you will love and someone I enjoy watching cook for me. Chef Eric Ripert, yes he’s French by birth but he showers daily and is a great friend and mentor to me. He also works at some place in New York City that has a few 4 diamond this and 5 star that. And he knows food and how to make it want to sit up and beg on your plate. So those are my suggestions my favorite of course Being Chef Kevin McVeigh from New York, the only person I know who was rejected from the TV show Top Chef for having too much experance and vision. Ahh no worries I still drive a Aston Martin.

  • “A Sea Day”

    We couldn’t wait for a “day at sea” to REST from all the wonderful excursions we had taken, particularly on the two 12 day European Cruises. Lee and I took the 9 and 10 hour excursions and boy were we tired!!! It was well worth it though!!

    You can come see us John, but not in Vegas! I haven’t lived there since my dancing days. We do visit quite often and I was there in Jan. of this year. We sold our home in Vegas (Green Valley) awhile back. I’ve been going to Vegas from LA since I was 5 ! I have many dancer friends who still live there. You and Heidi should go once, at least. We stay at Bellagio where Todd English has a restaurant, Olive’s. Have him “comp” you ! Ha!

    I had written you a while back concerning the possibility of a Gordon Ramsay theme cruise seeing as how his T-V shows are immensly popular here in the U S and I’m sure in trhe U K as well. I know you had mentioned him in some of your earlier blogs. Joanne and I never miss one of his programs and a good portion of our Tivo recording space is full of his shows.

    The only problem with having Gordon aboard is that it would probably have to be an adults only cruise due to his extreme fondness of the “F” word.However workshops could include such topics as the proper expletives to use with different types of cuisine,when to insult your hosts dinner offerings and how to raise various forms of livestock in order to maxmize their yield for the dinner table{I’m sure your P.E.T.A friend wouldn’t be attending that session}.

    Any how I hope You’re feeling much better these days and please give our best to Heidi.

    Looked like a beautiful day and a great way to end a cruise. Sounds like you’re doing better and ready to take on a whole new cast of cruisers. I wish it was with me and my family. We have three more weeks till we sail on the Spirit again I can’t wait.
    We also have Hawaii booked for September of “09″ for our 20th anniversary. I told my wife after that we had to do what ever ship you were on. Maybe the Bolger cruise #3….

  • Another Splendor question: What time will we be allowed to board the ship in Dover and what time will we be able to disembark; or as I affectionly call it “be kicked off the ship so the next group of lucky ducks will be able to sleep in our beds”? I know the times you give will not be set in stone, just trying to get an idea of where to stay the night before the cruise and trying to figure out the best way to get to Heathrow the day we are “kicked off the ship”.
    It’s so nice of you to share your high’s and low’s of life on the ship.

    Still following your blog and enjoying it.

    One aspect of cruising we have always enjoyed is the dining experience which has been outstanding on all our Carnival cruises including the Freedom last October. We think the supper club is a fantastic addition that has been added to most of your ships and the main dining room service and food remains outstanding.

    I felt compelled to respond to your question: “However………….would you like to see a celebrity chef involved in what we do……….if so…………who……….any ideas?”

    Since celebrity chefs will come and go and their popularity can be fickle, I suggest a different angle more focused on the food than the chef.

    I recall years ago having dinner themes based on ports of calls. For example, Jamaican black bean soup and jerk chicken when visiting Jamaica, Mexican food when visiting Mexico etc. If this is still the norm, it seems the focus/promotion has diminished (for example, if it was offered, I do not recall a French night, Italian night or Spanish night when cruising the med). I think appropriate dinner food themes (or more effective promotion of them) would add to the cruise experience; just an idea.

    A couple of weeks ago I asked if you could look up the number of children (18-) that were sailing on our cruise, in which you answered 890—Oh Joy!!! I was wondering if you could check to see, if by chance, say 790 children had decided to remain on land?

    We are sailing on the Valor, 03/23/08. Could you give the specifics, like you do on your cruises—specifically, the average age (not counting kids), and what nationality is dominant?

    The Greatest Generation is leaving us but as they leave their legacy lives on. As you said, the freedom that we all enjoy was won with their blood. The same is true today. The brave men and women who are fighting a war that has not one or two fronts but dozens, perhaps hundreds of fronts are no less heroes than those who preceded them. Thank you so much for always recognizing that fact.

    It certainly does look like a beautiful day on board, the kind of day that makes one want to stay as sea for a life time. Glorious.

    Did you ever happen to get that acupuncture treatment? Just wondering as you hadn’t mentioned.

  • John, So true about FREEDOM, Back when I was at that magical age of Spring Break and Carnival got me hooked on Cruising (NOT A BAD THING AT ALL), My friends and I would go on Spring Break Cruise every March, But Luckily all of our Parents had instilled that “RESPECT FOR OTHERS” credo in us. So while we made MR Budweiser and MR Coors Extremely happy (we had to get new sail and sign cards every 2 days because back then, they were made from paper) we respected our fellow passengers both young and old. It was on the Ecstasy about an hour or so before dinner, we were in the very back of the lido deck looking out on the wake when 2 older couples came out for a view. We immediately got up and offered them our seats. (If not my Mother’s hand would have slapped me from Boston). It was then we started into a very nice conversation about cruising, living life, and eventually the two Gentleman’s service to our country in World War II. The conversation lasted for hours, we missed dinner, we missed part of the Disco so many Spring Breakers live for, but what we did not miss was getting to spend some special time with some very, very special people who know what the true meaning and the cost of Freedom , and how quickly life can change. At the end of this obvious memorable evening, The 2 Couples looked at my friends and I and thanked us for a wonderfully unexpected evening. They Thanked us…. Obviously we thanked them and should continue to thank them

    Happy Friday John & the lovely Heidi (you’re lovely too John),

    What a wonderful couple the Gaylords are. And I salute him for serving all of us in WWII. My dad was in Europe in the Army Air Corps.

    Great posting from the ever-egotistical Chef McVeigh. Let me add a couple of top chefs from NY - Kevin, do you know Waldy Malouf (of Beacon) and Michael LoMonaco? My nephew introduced me to both of them when he was in college working for Waldy. Michael was the executive chef/owner of Windows on the World, and if he did not have to run an errand, he probably would have been lost on 9/11.

    I totally agree with Kathy - I love sea days too. I am so glad there are 4 sea days on my 8-day cruise on the Miracle. Yippee! Only about 200 days left to go. Gonna work on my tan the whole summer before I leave.

    Do you know that Prince Charles and what’s-her-name were just in Jamaica? If only it was next week then you could have renewed acquaintances and shown them your ship.

    First, my condolensces and prayers to the family and friends of the woman who passed away. A couple of years ago, we escorted a group on the Carnival Spirit to Alaska. Two and a half weeks before our cruise, one of our group was celebrating her 83rd birthday at the local dinner theater with her family. They had all just finished dinner, she was happy, smiling, and she just …passed away. Just like that. No pain, no discomfort, happy and surrounded by family. She is another angel in heaven.

    I admire the way you handled Mr. Stabilizer. Good for you. It showed remarkable restraint.

    Of course I would watch the TV show “Tales from the Blog”. I think Rene Zellweger would do a good job as Heidi, don’t you? She’s very talented.

    I have a nomination for celebrity chef. My current favorite is Robert Irvine. He is fun, has a good sense of humor, and was chef on the Royal Yacht Britannia. If he was good enough for the Queen of England, he’s good enough for me! I’m hooked on his show “Dinner Impossible”. If CCL can’t get him for some reason, why not Paula Deen? She’s a lot of fun, and she cooks good “down home” food. Not too spicy, but lots of butter. The cholesterol special!

    Note to Kevin, I really wish you had been on “Top Chef”. That’s another of my favorites. But I can’t agree with you on Anthony Bordain. He may be a chef, but he plays a jerk on TV. Wasn’t chef Heller the guy who threw the chef out of his kitchen on the first ever episode of Top Chef, because he was insulted by her shoes? (She was wearing white sneakers.) I don’t blame him for throwing the Irish guy out of the kitchen because he stuck his finger in the sauce to taste it. (Yuck). If it does happen in the kitchen at restaurants, I don’t want to know! (Again, bleah.)

    Just because other cruise lines have a celebrity chef who creates dishes like his peers, i don’t think this is a reason that CCL needs to copy its competition. If it ain’t broke, don’t fix it.
    A chef that was popular this year could be out of fashion so quickly. As a result, you would have to turnover your menu so frequently.
    I hope the next cruise improves the moral of the crew even though we don’t know what happened yet. I am thinking of you.

    Well it’s only 169 days before we come to see you!
    On the topic of chefs, I fancy myself as an amateur chef, and love to cook. Cooking is my true hobby. I volunteer in our local soup kitchen as well as volunteer my time in the local boy scout camp kitchen for events, and regularly find myself cooking meals for 200-500 hungry teenage boys! Maybe you can swing some time in the kitchen for me - I’d love to see the kitchen on the ship in operation.
    I’d have to second Kevin’s suggestion of Anthony Bourdain. By far one of the best “celebrity” chefs, who has a great deal of respect in the cooking industry as well as the general public. Also, when speaking of famous British chefs, don’t forget about Robert Irvine - I really like him and his show. It’s really too bad about the controversy surrounding him recently.
    I hope you get to feeling better soon on all fronts, and my condolences to the family of the passenger.

    Thank you for your tribute to the men and women who insure that my children sleep safely at home every night and for reminding us that Freedom is never “free”. There is a dear cost that is paid and as such, we who enjoy these freedoms should live our lifes in a way that would make those, who have sacrificed, very proud. The path we walk in our life should honor those who are no longer here to take those steps.

    David (hubby) only has one sibling. He is a Black Hawk Helicopter Pilot and (at the age of 44) just made Colonel. He has been Facility Commander for a few years. We were blessed to have he and his group return after one year in Iraq with no injuries or incidents.

    DJ is getting all excited about the Blogger’s Cruise.
    The Fantasy is his favorite ship!!

    We all know Kevin is the Number One Chef and would love to make him “earn his keep” on the Blogger’s Cruise!!!

    We are also thankful you have made it through yet another Spring Break cruise.

    My first thought for celebrity chef was Kevin McVei…. ooops sorry… Anthony Bourdain too. His knowledge of food seems boundless, he’ll dare anything and he has a very wry sense of humor. And to this day, because of him, I still refer to Emeril Lagasse as “Fuzzy Little Emeril”. And sorry CherylD, because of him I can’t see Robert Irvine’s show without calling it “Dinner Kind of Difficult”. LOL!

    And just to get away from Kevin’s French Chef suggestions, how about Mario Batali? His specialty is Italian. His food is delicious, I got to eat once at Po here in NYC before he left. And he seems like a very cool, jolly character.

    Ooooooo… now all I can think about is food. What the heck am I going to have for dinner?

  • Hi John It’s a beautiful day in Houston. It’s also time for our big rodeo, so a big YEE-HAW to you. I just to tell you this true story and it really is true. My 80 yr old aunt called to tell me that my cousin was booked on her first cruise and she was worried about getting sick from the movement of the ship. Since I have been on many cruises, I was asked how to avoid this. I said to try to get a cabin in the middle of the ship. My aunt replied “She can’t do that,she booked an ocean view room” GET IT……….I’ve told several people about this and I have to explain it to some, but I’m sure you would understand.     Should you decide to do a Gordon Ramsey themed cruise, I hereby volunteer to accompany him everywhere with an air horn - tooting the horn everytime I hear the letter “f” or “s” being formed by his mouth. Basically, I would just keep the air horn going 24/7.

    How have you been? How are Alan and Allison getting along these days? I honestly would love to meet them sometime, although I am sure you want to protect the rest of us from his ugliness :)

    I made the final payment on the May 31st Carnival Liberty cruise today, so it is time to begin the process of planning my shenanigans.

    First, since you mentioned that John & Diane are off the first night, since Harry’s is closed, it seems to me that we need another way to surprise them. My thinking is that we need to have one of them assigned to our muster station for the famous “how to fit your wonderfully comfortable orange scarf” seminar that must take place before departure. Imagine, we simply walk past one of them (Diane would be best) and simply say “Hi” as we march to our assigned muster station - I figure she might dislocate her jaw in surprise.

    Anyway, your thoughts would be appreciated. Given that our time can be limited, a night on the promenade enjoying their company would be a nice way to start the cruise.

    Liberty minus 78 days - it can’t come soon enough.

    FREEDOM… what a Glorious word and costly one! But without the gift that FREEDOM gives us, we would not be who were are. We would be who “they” choose for us to be!

    Thank you for your words, and honoring the gift that many fought for and died for and continue to defend. And for the sacrafices the families make to keep our FREEDOM.

    John, my dawg…….as you can see I have just gotten caught up to a few blogs. I keep having that picture of those two young men coming up to the captain and greeting him that way. Well, they WERE at least dressed for formal night. I was on another cruise where there was a young man in a powder blue tux and a ruffled shirt. Caused a lot of discussion between those of us married in the 1970’s–because, in reality, that was the fashion in that day. The young man in the green tux was just going retro, and the other one must have thought he was Ricardo Montalban on Fantasy Island.

    I am sorry about the experience you had on the ship two nights ago with someone passing on. That must be a terrible, horrible situation for all involved.

    I am trying to convince DH to go on Bloggers Cruise but to no avail. What should I do with him? I would also love to meet up there again with Linda Mom of DJ as we had a great time on Imagination.

    I finally got our picture back from the photo place–life interfered–but will be sending to you.

    I also will be going in about 10 days to a restaurant that Gordon Ramsay “restyled” on that TV show of his (Kitchen Nightmares??). Will let you know how the dinner is.

  • Wife and I will be joining the bloggers cruise in February. We just had to join the FUN!

    I don’t post very after, but read every one of the Blog thingies. This has really grown since I first began reading your Blog last April. There are a lot of inside jokes, but everyone becomes part of the family as they get to meet you and Heidi in person and experience your warm, caring, good humor. New cruises beware — John has a way of getting people to do or say the funniest things, like how he got me to say my wife was prettier than a polecat stretched out on a cedar post in front of over +3000 passengers on the Freedom our first night out of Rome.

    If anyone on the Fantasy drops their beer cans on deck or gives you grief during the bloggers cruise, just think how many enforces will be at your beckon call to help address the issue.

    Hope you continue to get better and throw Mr. Bells overboard.

My “two cents” today is regarding the guest chef. Of course I am partial to Kevin, but have to disagree with Anthony Bourdin. That man eats things people wouldn’t pick up with their hands! Ha! How about the Southern gal we call a “hoot”. Paula Dean. She’d be a fun celebrity chef. Spotted-dick.sothern style ( that would be fried!) Dan and Jeff say hello.     John -

    The sacrifices of people like Angela’s husband, the nearly half a million Americans and approximately 400,000 British soldiers and civilians, as well as all those, such as Sarge Charlie and Al Gaylord, who served can never be repaid. The naming of the Carnival Freedom is but a small down payment on the debt we owe these individuals

    I enlisted during a period of war for this country, unpopular as it might have been. In many ways, I felt it was my duty to my country and it remains a source of pride to this day.

    One honor this service gave me was to take care of the POWs when they returned from Viet Nam. These individuals truly sacrificed for their country, and many suffer these sacrifices even today.

    This year, I will be sailing on the Carnival Liberty on the day after the traditional celebration of Memorial Day, the day that honors those individuals who have made the ultimate sacrifice in the service of their country.

    Angela, your husband will be on my mind during that cruise.

    I am catching up on several blogs after a week of business travel…would have much rather been on a Carnival ship instead, but I guess we all have to make a living. Boy, what a rollercoaster of a week for you. I’m so sorry to hear about the loss of a passenger. My thoughts and prayers are with the family as they go through this difficult time. They are also with you and Heidi as I know how hard this must be for you both.

    On a different note, I hope the Bell’s is getting better. Have you had a chance to rest at all???

    As for Al Gaylord…what a sad story to hear that his reunion group is down to only 9 people. That truly is the greatest generation. I still regret I never took the time to learn all I could from my grandfathers about the service they performed for our country. But, I’m so proud of what they stood for and how they served.

    I read about the group of people that missed the ship. I can relate what a rotten experience that is, but I have to tell you everyone took such good care of us when we finally met up w/the ship that it helped us to put it behind us in no time. From the pier security to the ship security to the purser and our room steward all of who helped us get on the ship and settled as quickly as possible, they all deserve kudos!

    Can’t wait to hear about the plans you have in store for the bloggers in New Orleans.

    One final thing before I go…I thought of you this week as I was reading Eric Clapton’s biography during my flights. He wrote about Sunday dinners when he was a kid and how they always had spotted dick. What a kick I got out of reading that. Now, I’ll forever think of you John when I see or hear Eric Clapton. :)

    Our heartfelt condolences to the family of the lady from the Freedom who passed, We know some of what you feel as we are both paramedics and deal with death frequently, but as i have read on other message boards, those are the times, as unfortunate as the occurances are, when Carnival truely shines and shows it’s best to it’s best.

    I do have a question for you. We are booking another cruise (Carnival # 5 for us…no more flying saucers) on the Splendor for Dec. 13. The 2 of us and my wifes parents will all be cruising. Are you still going to be CD then??? I truely hope so, if not see about putting Wee Jimmie on it…we loved him on the Glory last year.

And, if you could get them away from Mr. Bud and Mr. Corona, I think you’d be surprised at how many of those Spring Breakers really do understand that sacrifice. After all, it is mainly their peer group that is fighting and dying. Our children are in their early 20’s and both of them have friends for which they’ve spent many months anxiously awaiting their safe return from war.

    Your story of Al Gaylord brought to mind two wonderful ladies who were among our tablemates on our second cruise many years ago: Lila and Ivy were two lovely, very proper, 80-something Londoners. They were best friends and sisters-in-law, both of their husbands had died and they were spending their widowhood together cruising at least once a year. One night, our table talk turned to WWII and we discovered both ladies had served in the British Army during the war. We asked them how they had served and, as we expected, Ivy replied she had been a nurse. However we were completely floored when Lila informed us she had been a machine-gunner for the ATS! They were truly members of the “greatest generation.”

  • Ooohhhh. Celebrity chef cruises! I know HAL does something like this — don’t know if they’re celebrities, but is that really necessary? One of our local chefs — Karen Blockman Carrier — did a week cooking and teaching on some cruise line. She brought a lot of Memphis along with her. She has four restaurants in Memphis — all very different (Automatic Slim’s, Do, The Beauty Shop,Cielo) She’s a great personality and I’ve gone to several cooking classes she offered and they were a blast.

    I adore foul-mouthed Gordon Ramsey. But the most charming celebrity chef I’ve ever seen put on a demonstration was the adorable Ming Tsai (restaurant — Blue Ginger). And, he was so nice to everyone afterwards as he signed his cookbook. Everyone just melted.

    Cookbooks. Yeah. That’s it. Memphis’ own Ben Smith (restaurant - Tsunami) just had a cookbook published. Folks like that would probably love to do the cruise if they could sell their cookbook. Tsunami is Pacific Rim food and very delish.

    Do your facial exercises, get some rest, take care of yourself!! So then you can escape…”Ask not for whom the Bell tolls. It tolls for thee.”

    Hi John!
    I can’t believe I have just discovered this site exactly one week before my Freedom cruise. I am now officially addicted to your blog and will spend the next few days trying to catch up. So sorry about your date with the Bell. I have had several friends dating the same - in fact one of my closest friend met Mr. Bell when she was nine months pregnant with her first child. You can imagine what a joy that was. Hang in there - try the exercises - you never know what will work! Looking forward to meeting you next week.

    Yesterday I was totally busted, and it was all your fault! Recovering from the FCAT crazies, I tried to sneak a peak at the blog thingy, kids thought I was just putting in attendance. Well, out popped a little giggle and suddenly is was, “Misssss Martin! What are you doing?” Hard to explain how I was enjoying my vicarious-mini-cruise.     Everytime I see pics of the “Freedom” it reminds me of my time spent on that beautiful ship. September 7, 2007 - Sept. 21, 2007 - Europe (ahh). It also reminds me that I never thanked you or you wonderful staff for a truely magical trip. Although I missed Canne and Levorno (I was sick) the trip will always be very dear to my heart for many reasons. Our cabin steward was so sweet when I was sick - checking on me often. There was also a very nice young man (James of the entertainment staff) who took the time to sit with myself and a friend and talk about our day. Anyhow, this is a belated thank you - I look forward to cruising with you again soon.

    We were on the Freedom and my husband wore his tix on formal night. It is up to him, Charlie (my husband) loves to wear it when he can and this was an opportunity for him to do so. There were a few others I think but I wasn’t really paying attention :) probably the same reason, he looked great in it and I was all eyes for him :) Good luck and have a fantastic cruise!

  • I just wanted to say thank you for being a wonderful Cruise Director. My family was on the Carnival Freedom March 8th-15th. We were a party of 12, three sisters aged 47, 45 and 32 with husbands and children ranging in age from 20 months to 18 years. We all had a super time and enjoyed ourselves immensely. I am the oldest sister and my husband and I had never been on a holiday further than an 8 hour drive. We are from Kirkland Lake, Ontario which is in northern Ontario and we left high snowbanks and travelled 10 hours by car just to get to our flight in Montreal, Quebec in Canada. I had been following your blog for about a month before we went and I must say kudos to you for being such an amazing communicator and after being on the cruise and seeing your shows it is very apparent that you love to do what you do. I wanted to purchase the DVD with the Ports of Call and unfortunately when I went to the Photograph kiosk at the end of the trip it was closed. Would you know if it would be possible for me to purchase it now or is it too late? I saw Heidi at the debarkation and told her to say hello to you and that you guys do a wonderful job. She is really sweet too. Keep up the great work!

    Met you on the Liberty July 2006 Mediterranean cruise . We are so glad we will see you again this July on the original inaugural Splendour ( July 13)!
    Just wondering if you have heard of any special activities which might be on this sailing .Our roll call is getting very excited as we get close to final payment! Hope we’ll be able to organize that ” meet and greet ” with you on board!Glad you are starting to feel better!

    My favorite boss I ever had. I was looking for “beautiful” images on google and it brought a picture off your blog site. How crazy is that? I hope you and Heidi are doing well.
